Mediterranean Chickpea Salad with Fresh Lemon & Herbs

I’m excited to share with you a recipe that’s perfect for those warm summer days when you crave something light, refreshing, and bursting with flavor. My lettuce-less Mediterranean Chickpea Salad is a vibrant medley of hydrating fresh vegetables, hearty chickpeas, and creamy feta cheese, all brought together with a burst of fresh lemon flavor. This dish is not only delicious and easy to make, but it's also packed with nutrients, making it a wonderful addition to any meal. Whether you're looking for a quick lunch, a side dish for your barbecue, or a healthy snack, this salad is sure to become a staple in your kitchen.


Mediterranean Chickpea Salad:

Ingredients:

- 1 (15 oz) can chickpeas, drained and rinsed

-8 oz roasted red peppers, sliced

-2 cups cucumber, chopped

-1 cup fresh Italian parsley, finely chopped

-8 oz Greek feta, cubed or crumbled

-Zest and juice of 2 lemons

-Sea salt and freshly cracked black pepper, to taste

-Aleppo pepper flakes (optional)


Instructions:

1. Prepare the Salad:

- In a large mixing bowl, combine the chickpeas, roasted peppers, feta, finely chopped cucumber, parsley, and Greek feta. Toss gently to mix the ingredients evenly.

2. Toss with Lemon and Spices:

- Add fresh lemon zest, juice, sea salt, cracked pepper, and chili flakes (if desired).

3. Chill and Serve:

- Let the salad chill for at least 15 minutes before serving to allow the flavors to meld together.

- Serve cold or at room temperature, and enjoy!
