Bacon Braised Brussels

This delectable side dish has earned a reputation as a game-changer, even for those who claim to despise sprouts. The secret lies in the harmonious blend of crisp bacon and perfectly braised brussels, creating a taste that transcends expectations. Bacon Braised Brussel Sprouts

  • 1 lb halved fresh brussel sprouts, ends trimmed

  • 4 cloves fresh garlic, finely minced

  • 1 cup thick-cut bacon, cut into lardons

  • 1/2 cup water

  • 1/4 cup raw honey

  • 1 tsp roasted sesame oil

  • 1/3 cup + 1 t extra virgin olive oil

  • Sea salt & pepper

  • Chili flake, to taste

  1. Season brussels liberally with EVOO, sea salt, and pepper

  2. Preheat oven to 425 degrees

  3. Render bacon over medium heat until golden and crispy, remove from pan and reserve

  4. Add olive oil into pan and heat

  5. Once hot, add brussel sprouts into pan, face side down

  6. Cook until caramelized and about 1/2 way cooked

  7. At half way point, add in water and scrape to remove brown bits

  8. Cook brussel sprouts face down AT ALL TIMES! This helps to tenderize them and creates that signature golden brown color

  9. In a separate mixing bowl combine honey, minced garlic, a pinch of sea salt/pepper, and chili flake together

  10. Pour honey/garlic/chili mixture over brussels and bake at 425 for 20 minutes

  11. Top with rendered bacon and serve!
