Grilled Cheese & Steak Skewers

When Caleb got a grill over the Christmas season we were both so excited to start cooking on it!

There's something about grilled food in my opinion that just makes it more addictive and satiating. I love how easy and quick it can be to create an entire meal on a grill, from savory all the way to sweet! In fact, simple grilled fruit is one of my top favorite ways to end a meal of grilled meats, vegetables, and in this case...CHEESE.

Yes, you heard that right! "Grilling cheese" is actually a thing and what a beautiful creation it is! If you've ever had Indian food, you may have heard of halloumi, which is a sturdy, creamy, and slightly salty cheese that can be cut into cubes, baked, roasted, grilled, or fried and still keep its shape. Another similar cheese to this is the beloved Latino queso de freir, which is a perfect substitute for any of these options!

The cheese from this particular recipe is the spicy jalapeño cheese from Big Moo and is one of my newfound favorite ingredients for skewers!

These skewers are a similar rendition to my Smoky Pineapple and Chicken Skewers and are the perfect weeknight or entertaining recipe for a crowd! What I love the most about any of these skewer recipes is the versatility, so feel free to add more/less of any of the spices or veggies (or replace with what you like!)

Grilled Cheese & Steak Skewers

  • 1 lb stew beef (or cubed steak of any kind)

  • 2 bell peppers, cubed (or you can use sliced baby bell peppers)

  • 1 onion, cubed

  • 8 oz baking cheese, halloumi, or queso de freir

  • 1 1/2 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp parsley

  • 2 tsp Worcestershire sauce

  • 1 tsp sea salt

  • 1/2 tsp freshly cracked black pepper

  • 1 tbsp grapeseed or olive oil

  1. In a bowl combine spices, beef, and oil

  2. Marinade for at least 15 minutes but preferably for at least a few hours

  3. Skewer beef, vegetables, and cheese in alternating order

Grill at 450 for 5 minutes per side until cooked to your desired level of doneness

Pro tip: Soak wooden skewers in water in order to prevent burning!
