Smoky Pineapple & Chicken Skewers

In our house we are always looking for meal-prep and family friendly recipes. Bonus points for those that incorporate fruits or vegetables throughout their preparation!


These smoky pineapple and chicken skewers are versatile, simple, quick, and sure to satisfy!

I love the fact that you can add or swap out the choice of fruit, vegetables, or meat in this recipe, making it a versatile and delicious staple meal!


All you need is a nice hot fire and about 45 minutes of preparation time before these succulent and flavorful skewers are on your table! These are packed with protein and can simply be served with your favorite steamed grain or side salad for a family friendly, well balanced meal!


Pineapple & Chicken Skewers

  • 1 lb chicken breast, cubed

  • 1 1/2 tsp smoked paprika

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • 1 tsp Worcestershire sauce

  • 1 tbsp neutral oil, like olive oil or grapeseed

  • 1 1/2 tsp sea salt

  • 1 /2 tsp freshly cracked black pepper

  • 1 tbsp fresh pineapple juice

  • 1 cup bell pepper, largely diced

  • 1 cup red onion, largely diced

  • 1 1/2 cups grape tomatoes, whole

  • 1 1/2 cups fresh pineapple chunks

Optional: Soak skewers in water prior to assembling skewers to reduce risk of heavy charring on grill
Variation: Wrap chicken pieces in thin strips of raw bacon before skewering for an added layer of flavor and moisture while grilling!
  1. Season the chicken with spices and toss with oil, marinade for at least 30 minutes, preferably for a couple of hours and best if marinated overnight

  2. Preheat grill to 475-500 degrees while the chicken marinates and put pineapple, vegetables, and skewers in order for efficient assembly

  3. Assemble skewers with no particular order

  4. Grill for 6-7 minutes per side, rotating often to grill evenly

  5. Serve best while hot!
