Simple Blackened Baja Fish Tacos with Fresh Mango Salsa and Creamy Garlic Sauce

The weather is finally warmer out and the sun is shining here in Orlando now that spring time is finally here! Nothing says “I’m ready for a day in the sun” better than fresh Baja fish tacos, especially when accompanied with my simple homemade mango salsa and creamy garlic sauce! Talk about sunshine in a bite, and the only thing that makes it better is how simple they are to make!


Baja Fish Marinade:


- 1/2 teaspoon pure sea salt

- 1/4 teaspoon smoked paprika

- 1 clove garlic, grated

- 1 tbsp good quality extra virgin olive oil

- 8 oz hearty white fish, like halibut or snapper


  1. Season fish with ingredients above and marinade for a minimum of 20 minutes.

  2. Add a touch of oil to a hot pan and blacken fish until cooked thoroughly


Garnishes


- Watermelon radish, held in cold water

- Creamy garlic sauce, see recipe here

- Fresh mango salsa, see recipe here

- Thinly sliced chilis, optional

- Corn/flour tortillas or jicama wraps
