Rosemary Roasted Beets

  • 4-5 medium sized beets

  • 2 tbsp extra virgin olive oil

  • 2-3 sprigs fresh rosemary

  • 2 cloves garlic, finely minced

  • 1 tsp

  • 1/2 tsp cracked black pepper

Pro tip: Put a bit of salt on top of your garlic before mincing which acts as an abrasive and breaks down garlic

  1. Preheat oven to 425 degrees

  2. Wash beets thoroughly and dice into bite-sized pieces

  3. Season throughly with salt, olive oil, cracked pepper, garlic, and fresh rosemary

  4. Roast for 30-35 minutes until caramelized and fragrant
