Rosemary + Olive Oil Focaccia Bread

  • 500 g bread flour

  • 7 g instant yeast

  • 10 g sea salt

  • 10 g sugar or honey

  • 450 g lukewarm water (around 100 degrees)

  • 30 g quality extra virgin olive oil

  • Garnish ingredients (vegetables, herbs, cheese)

  1. Combine water, sugar/honey and yeast. Bloom until frothy and yeast is fully activated, about 5-10 minutes

  2. In a mixing bowl, combine flour and sea salt

  3. Add yeast mixture + olive oil

  4. Knead to combine and until a dough ball forms, adding small dusting of flour to the countertop as needed to prevent sticking

  5. Cover with a damp towel and let dough rise until doubled in size

  6. Place dough onto a well-oiled baking tray and use fingertips to evenly spread dough out thin

  7. Top with garnishes and another sprinkle of sea salt, let rise for another 2-3 hours

  8. Preheat oven to 375 and bake for 25-30 minutes until golden brown and fluffy

  9. Enjoy best while warm!
