Baked Chicken Nuggets

Today, I'm excited to share a recipe that will transport you back to your childhood. Who says you can't indulge in your favorite childhood comfort foods even as an adult? That's right, we're talking about homemade chicken nuggets! These delightful bite-sized treats are not only simple to make, but they also offer endless opportunities for creativity. Plus, if you're a parent, I have an incredible meal prep and veggie-sneaking hack for you!


These make for a fantastic snack or quick bite for yourself but are also the perfect meal prep option for busy parents! Prepare a large batch and freeze them for those hectic days when time is of the essence.


But wait, there's more! Sneak in some veggies to make these nuggets even more nutritious without sacrificing taste. Get adventurous and try adding shredded squash, carrots, cauliflower, broccoli, sweet potatoes, or any other veggies you and your family enjoy. Finely chop or grate the vegetables and mix them into the chicken mixture before shaping them into nuggets. It's a brilliant way to boost the nutritional value and get your little ones to eat their veggies happily!


Breading:

  • 1 cup seasoned breadcrumbs

  • 2 whole eggs, beaten

  • 2 tbsp milk

  • 1/2 tsp sea salt

  • 1/4 tsp freshly cracked black pepper

  • 1/2 tsp garlic powder

  • 1/4 tsp cayenne pepper (optional)


  1. In one bowl, whisk the eggs and milk together until fully combined.

  2. In a separate bowl, mix the breadcrumbs with the spices until evenly distributed.


Baked Chicken Nuggets

  • 1 lb ground chicken breast

  • 2 tbsp seasoned breadcrumbs

  • 2 whole eggs

  • 2 tbsp milk

  • 1 tsp sea salt

  • 1 tsp freshly cracked black pepper

  • 1/4 tsp white pepper

  • 1/2 tsp ground garlic paste

  • 1/2 tsp cayenne pepper (optional)

  • 1/2 tsp ground mustard powder

  • 2 tsp hot sauce (optional)

  • 3 tbsp melted butter


  1. In a large mixing bowl, combine ground chicken with salt, pepper, garlic, cayenne, and hot sauce until evenly seasoned.

  2. Add breadcrumbs, eggs, and milk. Mix just until a slightly tacky mixture forms—don’t overwork.

  3. Scoop and portion into tablespoon-size balls.

  4. Gently flatten each piece in your palm and place on a parchment-lined sheet tray. Freeze for 30 minutes to firm up (this makes breading much easier).

  5. Dredge each nugget in egg, then coat thoroughly in the breadcrumb mixture.

  6. Arrange on a baking sheet and drizzle or brush the tops with melted butter.

  7. Bake at 425°F for 25–30 minutes, until golden brown, crisp, and cooked through.
